Fujian oolong tea (especially Wuyi rock tea) is an important branch of Chinese oolong tea. It is famous for its rock rhyme of "rock bone and flower fragrance" and is produced in the core production area of Mount Wuyi, Fujian. Rock tea is created with a unique semi fermentation process and charcoal roasting technology to create a rich and layered flavor. The following is a detailed introduction to its color, aroma, taste, and other aspects:
1、 Definition and technological characteristics of rock tea
Raw materials: selected from local varieties in Mount Wuyi, China.
workmanship
Make green (alternate shaking and standing): Form a "green leaf red border" to stimulate the fragrance of flowers and fruits.

Charcoal roasting (slow simmering over low heat): removes astringency, enhances richness, and endows tea soup with a "fire power aroma" and stability.
Core concept:
Yanyun: The mineral texture and mountain atmosphere contained in the tea soup are manifested as "lively, sweet, clear, and fragrant".
Shanchang: Zhengyan (core production area), Banyan, and Zhoucha. The closer the production area is to Danxia Rock Wall, the more prominent the rock charm becomes.
2、 Color expression
Dry tea
The leaves are tightly tied and sturdy, with a dark brown and oily color (traditional foot fire tea) or a greenish brown with sandy green color (light fire tea), and often have a "toad back" on the leaves (formed by charcoal roasting).
tea
Golden and translucent, fresh and vibrant.
Leaf base
Soft and even, presenting a "green leaf red border" (fermentation marks). Traditional foot fire tea leaves have a dark brown base, while light fire tea leaves retain more yellow green color.
3、 Aroma Levels
Rock tea has a complex aroma, which is described as "perfume in tea", mainly divided into three categories:
Craft fragrance (charcoal roasted fire fragrance)
4、 Taste and Rock Charm
Taste characteristics
Plumpness: The tea soup is as thick as rice soup, with a "bone feeling" (the astringency brought by minerals) when tasted.
Returning sweetness and generating saliva: After bitterness, it turns into sweetness, and the cheeks produce saliva like springs (such as Zhengyan cinnamon).
Coolness sensation: Leave a hint of coolness in the throat after swallowing (a sign of good mountain scenery).
Yanyun expression
Activity: The tea soup is lively and not dull, and the taste changes with the brewing process.
Gan: Continuously returning sweetness from the tip of the tongue to the bottom of the throat.
Clear: The tea soup is pure and free from any impurities.
Fragrance: The fragrance falls into the water and lingers at the bottom of the cup after drinking ("hanging cup fragrance").

5、 Tasting and brewing suggestions
Brewing method
Utensils: The preferred choice is a purple clay teapot or a white porcelain covered bowl, which can enhance fragrance and charm.
Water temperature: Boiling water at 100 ℃ stimulates aroma and taste.
Soup extraction: The first 3 bubbles are quickly extracted, and the subsequent bubbles are gradually steeped to extend the soaking time.
Drinking techniques
Smell: Hot smell (fire fragrance), warm smell (variety fragrance), cold smell (mountain clear charm).
Sipping tea: Inhale the tea soup in small sips, stir with the tip of your tongue to feel the taste change.
Storage suggestions
Rock tea should avoid moisture and odors. Foot fire tea can be stored for 2-3 years, and light fire tea is recommended to be consumed within 1 year.
The charm of Wuyi rock tea lies in the saying 'one mountain, one flavor, one tea, a thousand changes' - from the local customs of the mountains to the roasting techniques of the craftsmen, each tea brewed blends the strength of the rocks with the elegance of the plants and trees, making it feel like strolling through the clear waters of Wuyi Dan Mountain.
